I can never say “no” to chocolate. It is the best sweet thing for me ever. Every time when I’m choosing what to order in a cafe – a cheesecake or a brownie – the latter always win. The same happens in my kitchen – I like to experiment with my old favourite recipes adding chocolate or cocoa. This time I upgraded my favourite recipe of clafoutis. I made chocolate clafoutis with pear and also added a little bit of delicious Gorgonzola which made this recipe especially tasteful!
Chocolate Pear Clafoutis with Gorgonzola (gluten free)
(28-30 cm in diameter) 75 g sugar 75 g almond flour + 15 g to sprinkle the baking pan 40 g cornstarch 4 eggs 200 g soured cream 11 g baking powder 100 g dark chocolate good quality 1-2 tbsp gorgonzola 1 tbsp butter 15 g almond flour
Mix almond flour, baking powder and cornstarch in the bowl. Beat the eggs with sugar in a big bowl. Add soured cream and dry ingredients. Mix until smooth.
Melt the chocolate and let it cool. Cut gorgonzola into pieces or use the creamy one as I did. Add melted chocolate and gorgonzola into other ingredients. Mix well.
Preheat the oven to 175 C degrees.
Peel the pears. Cut them into slices.
Spread the baking pan with butter and sprinkle with almond flour. Pour in the batter. Place sliced pears on the top and bake 15-20 minutes.
Serve warm or cold.
