Yesterday, when buying products at the store, I saw ugly, very ripe bananas, and decided that I want to bake a banana bread for breakfast! After all, people won’t even consider buying these unsightly bananas, but they don’t know that they’re ideal for baking! Banana bread has an intensive banana-caramel flavour and a perfect crisp!
Well, for those who dislike to wash the dishes same as me, this recipe is like a godsend! Because all you need for baking is one large bowl and a spoon. Enjoy!
Oatmeal Banana Bread
(baking pan 10x20 cm)
3 very ripe bananas (smashed) 100 g sugar 70 g butter (melted) 1 egg 1 cup all-purpose flour 1/2 cup oat flour 2 tbsp oat flakes 1 tsp baking soda pinch of salt 1/2 tsp ginger powder + 1/2 tsp cinnamon (optional)
Tania's notes:
Smash the bananas in the large bowl using wood spoon or fork. Add melted butter and stir together. Add egg, sugar, salt, baking soda, spices. Mix it well. Add sifted flour (both types). Mix the dough until smooth.
Bake for 1 hour. I recommend to not open your oven until first 30 minutes baking.
Ready Banana bread cool on the grate. Slice and serve.
I love to eat the warm slice of banana bread with butter the most. Mmm… it’s a perfect start of day, I think!
Love, Tanya
